Like so much of the Mediterranean Basin it has many culinary influences from successive cultures of occupation, including Cretans, Romans, Moors, Spanish, and more. This is the land where San Marzano tomatoes were bred, pizzas were perfected, modern die-cut dried pastas were invented, buffalo milk mozzarella was created, and the lemons of Sorrento get turned into Limoncello. Classic dishes include Insalata Caprese (tomato, mozzarella, and basil salad) and Parmigiana di Melanzane (Eggplant Parmesan) but we will introduce you to less well known but equally delicious dishes.
