Ruth Kendrick
Ruth Kendrick has been making candy and dipping chocolates for over 50 years. She and her mother-Pauline Atkinson wrote HPBooks "Candymaking" in 1987. In March of 08, Ruth went to Montreal and took an Advanced/Expert level course at the Callebaut Chocolate Academy and learned new ways to make chocolates. She now is using molds and colored cocoabutter to make her chocolates unique. She doesn't use fondants any longer, but rather ganache fillings. These are very smooth and rich emulsions of chocolate and cream. Texture sheets are also used to make each piece special. Ruth established her business-Chocolot- in August of 2008.
