Whole Wheat Bread

5 cups warm water
1/4 cup oil
3 Tbsp dough enhancer
1/2 cup gluten
1/4 cup honey
1 Tbsp salt
2 Tbsp SAF instant yeast
12 cups (approximately) whole wheat flour, divided

Mix water, oil, dough enhancer, gluten, honey, yeast and 6 cups whole wheat flour in Universal BOSCH Mixer for 1 minute on speed 1. While mixer is still running, add salt and remaining flour gradually until dough is tacky to the touch, but not sticky (be sure to turn mixer off before touching the dough). Turn BOSCH up to speed 2-3 and continue to knead for an additional 6 to 8 minutes. Shape into loaves, put into greased pans and let raise until double. Bake 25 to 30 minutes at 350° F., or until internal loaf temperature is at least 190° F.
